‘Nigerian Sketch’ news source recently published an article that explores the market potential of unripe dates in the UAE. Khalil Faruk, author of the review claims that unripe dates would become the new food trend in UAE.
Study researchers found 16 stages of date ripening that alter it from yellowish-green to dark brown in colour and concluded that date as a climacteric product can continue ripen after being picked.
This study findings suggests to consume the fruit in its early bisr stage with 50 per cent wet crunchy texture and with the polygalacturonase has lower sugar content and contain more fibre than ripe dates, which means that they are likely to offer health benefits, an important consideration in a country with high levels of obesity.
